Welcome to leftover Monday!

Derek and I decided to divide the leftovers from the weekend for lunch. He took last night?s leftover quinoa, and I got Friday?s left over sweet potato soup pizza.

I really enjoyed the eggs I added to the two pieces of pizza I had for lunch yesterday, so I decided to fry up two more for lunch today. I added the eggs right on top ? no fork needed.

Actually, this might be my new favorite way to eat leftover pizza. Looking to spice up day old pizza? Just add an egg. Problem solved.

Whole Trade Month {Giveaway}
